Meaty

I have never had so much meat in my refrigerator before.  Currently:

Frozen:
1 small pork tenderloin cutlet
2 bone-in chicken breasts

Fridge:
6 oz of Pancetta
1/2 LB deli sliced Turkey, low sodium
12 oz Bacon
3/4 LB Chicken Sausage

Thats a lot for me.  Considering I eat mostly plant, switching to Low Carb high protein and not adding beans at this time is hard for me.  Last night I had a pork tenderloin cutlet, it was fucking disgusting.  Too chewy.  I thought maybe I made it wrong, but I just dislike the texture of meat.

I’m better with chicken and I don’t think bacon will be much of an issue.  So far  it hasn’t been too bad, so far meaning day 2.  I need to do some hardcore meal/snack planning and kitchen organizing.

Tomorrow I will make a huge lasagna with eggplant as noodles and the chicken sausage I bought.  I’ll section that out and freeze it for meals during the week.  Easy peasy.
